The basis of a well-seasoned borscht can be none other than the duo of salt and black pepper. It is to them that traditional, home-made red borscht owes its intense, characteristic aroma - adored by many of us! Black pepper not only successfully emphasises the spicy notes of the soup, but above all does not dampen the taste of the other spices added to it.
Adding bay leaf to borscht - thanks to its characteristic bitterness - perfectly enhances the aroma of the soup. In many homes today, it is still difficult to imagine borscht without a bay leaf - and this has become something of a tradition. The aroma of the bay leaf emphasises the deep flavour of the dish and allows for a balance between the bitterness and sweetness of the borscht.
Caraway is a spice which is fantastic for enhancing the aroma of many dishes - including borscht! Interestingly, enhancing flavour is not its only advantage.
