Why is vanilla from Madagascar called Bourbon vanilla?
The term 'Bourbon' in the context of vanilla comes from Île Bourbon (Bourbon Island, Isle Bourbon) , the former name of the island of Réunion, which lies to the east of Madagascar. This island played an important role in the cultivation and trade of vanilla in the 18th and 19th centuries. Although vanilla from this region is technically a variety of 'Vanilla planifolia' (as is most vanilla grown in Madagascar), the name 'Bourbon' has become synonymous with vanilla grown in this part of the world, including Madagascar, the Comoros and Réunion Island.
The name 'Bourbon' has nothing to do with the spirit bourbon produced mainly in the USA. Although vanilla and bourbon are often combined in recipes because of their complementary flavours, their names have different origins.

Uganda van illa, in our opinion, has a stronger aroma that at first brings to mind sultanas. In contrast, the aroma of Bourbon vanilla from Madagascar is more subtle, with chocolate notes playing first place.

Longer ones also have more of them. It is important that the vanilla is not dried out - if the vanilla bean is not flexible, it will not extract the valuable vanilla beans known as vanilla caviar (although it should be noted that dry vanilla bean extraction grade is used to produce extract). A flexible vanilla bean is one that you can wrap around your finger without breaking it. On the other hand, vanilla that is too moist can quickly go mouldy.
